No Bake Protein Oatmeal Cookies
MACROS (per serving, makes 24 cookies):
1 scoop Oatmeal Cookie Buff Whey
300 g Protein rolled oats
300 g Brown sugar replacement 100 g Granular sugar replacement
113 g Light soft butter
125 g Peanut butter
118 ml Fat-free ultra-filtered milk
30 g Unsweetened cacao powder
2 tsp Vanilla extract
Pinch of salt
In a medium saucepan, add butter, milk, brown sugar replacement, granular sugar replacement, salt, and cocoa powder. Set the heat on the stovetop to medium and heat the ingredients until everything melts together, and stir. Once it starts to boil, allow it to cook for one more minute before removing it from heat.
Pour the mixture into a large bowl and add in the peanut butter and vanilla extract. Stir to combine until the peanut butter melts.
Mix in the protein rolled oats (can sub for regular rolled oats), and look for a thick consistency.
Add parchment paper or a silicone mat to a cookie sheet and drop spoonfuls of cookie dough onto the baking sheet. Let the cookies cool at room temperature, then place them in the fridge to set for at least one hour. The cookies are done when they are no longer glossy and aren't sticky to the touch.
