Buff Peanut Butter Cups
MACROS (per serving, makes 12 servings):
175 calories
5g protein
16g carbs
10g fat
INGREDIENTS:
1 scoop of Buff Chick Vegan Fudge Brownie
240g of semi-sweet vegan chocolate chips
75g of creamy peanut butter
21g of refined coconut oil
3 tbsp of PB2 (powdered peanut butter)
2 tbsp of powdered sugar replacement
Coarse sea salt, optional
DIRECTIONS:
Line a standard sized muffin tin with paper liners or a baking sheet with 12 paper liners.
In a bowl melt the chocolate chips with the refined coconut oil in the microwave for 1 minute, stir well. Add in 1 scoop of buff chick vegan fudge brownie protein after the chocolate has been melted, and combine well.
Scoop about half of a tablespoon of chocolate into each cup, and spread it around the bottom and up the sides a little bit with a small spoon. Use your fingers on your other hand to stabilize the cup. Place the pan in the freezer for 10 minutes so the chocolate can harden.
In a bowl, mix together the peanut butter, PB2, and powdered sugar. A sort of dough will form.
Add about a ½ tablespoon of the peanut butter mixture on top of the hardened chocolate, and press down a bit with your fingers or spoon to help spread the mixture.
Cover the rest of the cups with the remaining chocolate, spreading it gently with a spoon if needed. Sprinkle with salt and place them back in the freezer for 10 minutes to set.
Once the PB Cups have been set, you can enjoy eating them!
STORAGE:
Store the peanut butter cups in the refrigerator or freezer (in a freezer safe container), but not at room temperature.
HELPFUL TIPS:
It’s best to use regular peanut butter, as natural peanut butter can be a little runny or very thick, and is not as consistent.
Refined coconut oil works the best.
Any non-dairy chocolate chips will work.
