Elevate your snack game with our Coconut and Lemon Bars. A luscious combination of Buff Whey Fried Vanilla Ice Cream, unsweetened coconut flakes, and a burst of lemony goodness. These bars taste amazing and offer a whopping 30g of protein per serving! Our Buff Chick Chef (aka @pancakegawd) topped these bars with a drizzle of chocolate and a sprinkle of coconut flakes, they're as visually appealing as they are delicious!
High Protein Coconut and Lemon Bars
MACROS (per serving):
Makes 6 serving
200g Buff Whey, Fried Vanilla Ice Cream
35g unsweetened coconut flakes
50g coconut oil
95g fat-free protein milk
1 lemon, squeezed and zested
1 tbsp of chocolate chips
Splash of fat-free milk
5g unsweetened coconut flakes
In a large bowl add in all the dry and wet ingredients then mix until well combined. The mixture should be a thick consistency.
Add the mixture to a lined bread pan and spread evenly with your fingers (wet your fingers lightly to get an even spread.)
Place in the freezer and allow to set for 1 hour.
Add a splash of milk to the chocolate chips and microwave for 30 seconds, then stir.
Take the coconut mixture out of the freezer, remove it from the pan, and spread the toppings over top. Cut into 6 bars and enjoy (keep refrigerated to hold its shape).
