Looking for something decadent for desert that won't break your macros? As always, JamaRR Royster - aka @pancakegawd – has just the thing... High-Protein Cheesecake Parfait! With the help of Buff Whey Fudge Brownie, Strawberry Banana, or Birthday Cake, each mouthwatering serving has 30 grams of protein! 

High-Protein Cheesecake Parfait

MACROS (per serving):
Makes 2 servings (including 2 Buff Chick Protein Brownies)

30g protein
41g carbs
30g fat

INGREDIENTS:
1 scoop of Buff Whey, Strawberry Banana or Birthday Cake
250g Punnet of Strawberries
2 Tablespoons Swerve
225g Cream Cheese, less fat
2 Tablespoons of Powdered Sugar
125-150ml or ¾ Cup of Grade A Light Cream
2-3 Brownies (Buff Chick Protein Brownies Recipe located below)

DIRECTIONS:

Remove the tops from the strawberries and cut them into quarters and place in a small bowl. Sprinkle over the swerve sugar and use a spoon to toss the strawberries until they are evenly coated. Leave the strawberries to sit for about 30 minutes.

Add the room temperature cream cheese to a bowl and stir to soften.

Measure out the powdered sugar, 1 scoop of Buff Whey and add to the cream cheese. Fold together until well combined and smooth.

Switch to using a whisk and pour in the light cream (a little at a time). Beat with the whisk until the mixture thickens to whipped cream consistency.

Cut the brownies up into bite sized pieces and place into the bottom of two glasses (Stemless wine glasses work great).

Follow with the macerated strawberries and cheesecake filling.

Garnish with strawberries and brownies before serving.

NOTES:
The Cheesecake Parfait requires a previous Buff Chick recipe “Buff Brownies,” or people could use store bought brownies. The macros are for this Cheesecake recipe + 2 buff brownies.

If you don't have brownies you can use store bought. You can use frozen strawberries in place of fresh, just let them come up to room temperature before using. 

Buff Brownies

MACROS (per brownie):
Makes up to 12 brownies

11g carbs
3.3g fat

INGREDIENTS:
1 can of drained chickpeas
2 scoops of Fudge Brownie Buff Whey
½ tsp of Salt
2 tbsp of cocoa powder
½ cup of Biscoff cookie butter
½ cup of sugar free syrup
1 egg
Chocolate chips (optional)

DIRECTIONS:

Preheat the oven to 350 degrees.

Line 6” baking dish with parchment paper.

Combine all ingredients in a food processor until smooth. Pour batter into the baking dish. 

Drizzle about 1 tsp of melted cookie butter over top of brownie batter and sprinkle chocolate chips. This is all optional but highly recommended. 

Bake for 20-30 mins or until a toothpick inserted in the center comes out clean. Allow to set for about 10 mins before serving.
