A timeless dessert from our Buff Chick Chef's— @pancakegawd— kitchen, for anyone craving strawberries! Our Strawberry Shortcake is a classic summer treat with layers of shortcake, strawberries, and whipped cream. This summer (or year-round) delight is full of protein to ensure you're still meeting your goals.
High-Protein Strawberry Shortcake

INGREDIENTS:
28g of Buff Whey, Strawberry Milkshake
36g of fresh strawberries, diced
100g of vanilla protein yogurt
18g of zero sugar whipped topping, room temp
14g of salted butter
1 whole egg
1/2 tsp of baking powder
18g of granular sugar replacement
2g of vanilla extract Pinch of salt
28g of whole wheat flour
DIRECTIONS:
Mix the yogurt, strawberries, Buff Whey, and whipped topping in a large bowl until well combined. Let it sit in a bowl in the fridge until the assembly.
In a small bowl, heat butter in the microwave for 20-30s until melted, then add the egg and vanilla extract, and whisk until well combined.
Then add the dry ingredients (flour, sugar, baking powder, salt) and mix until combined.
Transfer mixture to a sprayed/greased 8 oz ramekin and place in the microwave to cook for 1 min 30 seconds. After every 30s, open the microwave and check on the shortcake. Once it’s done cooking, set it aside and allow it to cool.
Once the cake has cooled, remove it from the ramekin and slice it into 4 even slices. (You can cut the 4 slices into circular shapes or leave them as is.) Assemble the shortcake by placing one of the cake slices down, then add some of the protein filling on top. Repeat the same steps to complete the top layer and enjoy!
