Indulge in the zesty delight of our Lemon Muffins, made from the kitchen of our Buff Chick Chef (@pancakegawd). These are the perfect protein-packed treats to enjoy this summer as a snack or for breakfast. Try this recipe for some flavorful muffins!
High Protein Lemon Muffins
MACROS (per serving):
Makes 12 serving
150 calories
7g protein
22g carbs
3g fat
INGREDIENTS:
35g of Buff Whey, Fried Vanilla Ice Cream
200g of all-purpose flour
100g of granulated sugar
1 tsp of baking powder
½ tsp of baking soda
⅛ tsp of salt
1 lemon, zested
120ml of fat-free milk
2 tbsp of coconut oil, liquid
1 tsp of vanilla extract
165g non-fat plain Greek yogurt
2 eggs
½ lemon, squeezed
DIRECTIONS:
Preheat the oven to 425°F and grease or spray a 12-count muffin tin with cooking spray. Set aside.
In a large mixing bowl, whisk together all the dry ingredients including the lemon zest. In a separate bowl, whisk together all the wet ingredients until well combined.
Add the dry ingredients to the wet ingredients and use a whisk to gently combine until you have a uniform batter (don’t over-mix).
Evenly divide the lemon batter into the prepared muffin tin and bake for 7-8 minutes. Reduce the temperature to 350°F and continue to bake for another 5-6 minutes until a toothpick inserted in the center of a muffin comes out clean or with a few moist crumbs.
Remove the muffins from the oven and allow them to cool in their pan for about 5 minutes before removing them from the pan and allowing them to cool on the cooling rack.
Enjoy as is or prepare a lemon glaze with lemon juice and powdered sugar (optional and not included in the macros).
