Ingredients
For the Batter:
1 cup all-purpose flour
½ cup Fried Vanilla Ice Cream Whey Protein (~1 scoop / 28.7g)
3 tsp baking powder
1¼ cup milk (use Fairlife for an extra protein boost!)
1 egg
2 tbsp avocado oil
1 tsp vanilla extract
½ cup fresh raspberries
Garnish (Optional but Highly Recommended):
Fresh raspberries
A drizzle of honey or maple syrup
Whipped cream or Greek yogurt
Powdered sugar
A Buff Coffee on the side
Instructions
Step 1: Mix Your Wet Ingredients
In a large bowl, whisk together the milk, egg, avocado oil, and vanilla extract until fully combined. Set aside.
Step 2: Mix Your Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, whey protein, and baking powder until evenly blended.
Step 3: Combine
Gently fold your dry ingredients into the wet ingredients. Stir just until combined — don't overmix! A few small lumps are totally fine and actually help keep your pancakes fluffy. Carefully fold in your fresh raspberries last.
Step 4: Cook
Heat a lightly greased griddle or non-stick pan over medium heat. Pour approximately ¼ cup of batter per pancake onto the griddle. Cook until bubbles form on the surface and the edges look set, then flip and cook until golden brown on both sides.
Step 5: Stack & Serve
Stack 'em high, garnish with fresh raspberries, a drizzle of maple syrup, and a dollop of whipped cream or Greek yogurt for the full experience.
