Indulge in the zesty delight of our Lemon Poppyseed Blueberry Muffins, made from the kitchen of our Buff Chick Chef (@pancakegawd). These are the perfect protein-packed treats to enjoy as a snack or for breakfast. Try this recipe for some flavorful muffins!
High Protein Lemon Poppyseed Blueberry Muffins
MACROS (per serving):
Makes 6 serving
165 calories
12g protein
16g carbs
8g fat
INGREDIENTS:
28g of Buff Whey, Blueberry Muffin
65g of self-rising flour
30g of sugar replacement
1 tsp of baking powder
1 tbsp of poppyseed
200g of vanilla Greek yogurt
2 whole eggs
30g of olive oil
2 tsp of vanilla extract
½ cup of frozen blueberries
½ lemon, zested
Dash of salt
DIRECTIONS:
Preheat the oven to 350°F and line a muffin tin with 6 paper liners.
In a large bowl sift together the flour, baking powder, and salt, then set aside.
In a separate bowl combine the yogurt, eggs, oil, lemon zest, and vanilla extract. Mix until everything is well combined, then add Buff Whey, sugar, and poppyseeds and continue to mix until everything is well combined.
Combine the dry ingredients to the wet ingredients until everything is well incorporated.
Add the frozen blueberries to the mixture and gently fold. Now, pour the mixture evenly into the muffin liners.
Place the muffins in the oven to bake for 22-24 minutes. Once baked, remove the muffins from the oven to cool completely before serving.
Tips:
Toss frozen blueberries with 1 tsp of flour before folding into mixture
If you’d like a thicker batter, you can add 1-2 tsp of xanthan gum
